Apple Cider Donuts

These Apple Cider Donuts are the perfect fall treat to make! They are definitely one of my favorites to make and these ones turned out perfectly moist and fluffy! They are vegan, paleo, gluten free, and refined sugar free! They are made with an apple cider reduction which is the key Ingredient which makes the flavor!

Equipment

  • Large donut silicone mold

Ingredients
  

  • 1 cup cassava flour
  • 1 cup almond flour
  • 1/2 cup coconut sugar
  • 1/2 cup apple cider reduction( 2 cups apple cider reduced down)
  • 1/2 cup nut milk
  • 2 eggs or egg replacer
  • 1 tsp cinnamon
  • 1 tsp allspice
  • 1 tsp apple cider vinegar
  • 1 tsp baking soda
  • 1 tsp baking powder

For the cinnamon "sugar" coating

  • 1/3 cup granulated monk fruit
  • 1 tsp cinnamon

Instructions
 

  • In a small sauce pan on the stove over medium heat, bring your 2 cups apple cider to a boil and then simmer for about 20 mins or until it reduces down to half a cup. (Stir occasionally throughout the process.) Let it cool for a few minutes.
  • Preheat your oven to 350 degrees.
  • Mix your wet and dry donut batter ingredients separately then together including the apple cider reduction.
  • Add batter to a plastic bag or frosting bag and squeeze batter into 9 silicone donut molds.
  • Bake then for 20 mins. When they are done let them cool completely
  •  Mix together your monk fruit and cinnamon for the donut coating. Dip each donut in the cinnamon sugar mixture. Enjoy with a cup of chai or coffee!
