Apple Pie Yogurt Granola Cups

- 3 cups gluten/grain free granola
- 1/2 cup almond butter
- 4 tbsp melted coconut oil
- 1 1/4 cups dairy free plain or vanilla yogurt
- 3 tbsp vanilla collagen or protein powder
- 1 tsp cinnamon
- 1 tbsp maple syrup
- 1 large apple(cut into small pieces)
Add the granola to a food processor and process until the granola is a crumble consistency.
Add the granola to a bowl along with the almond butter and 3 tbsp melted coconut oil. Mix everything well.
Add a couple spoonful's to each muffin cup and push down in the middle and spread on the sides to form a granola cup shape. Place the granola cups in the freezer for 30 minutes.
Take your apple and chop in into small pieces. In a pan over medium heat, add your apple pieces and remaining 1 tbsp coconut oil. Sautee until the apple are tender and add the cinnamon. Set apples aside to cool.
In a bowl mix together the yogurt and protein powder. Take the granola cups out of the freezer and add a couple spoonful's of the yogurt to each cup.
Top the yogurt granola cups with the cinnamon apples.
Store in the fridge and enjoy throughout the week.
