Berry Yogurt Granola Parfait

I love simple healthy breakfast recipes that don't take much time at all to make like this Berry Yogurt Granola Parfait! It's packed with fiber, healthy fats, and antioxidants that will nourish the body and satisfy the taste buds. I have a fantastic recipe for a high fiber gluten free granola that I can literally just snack on by itself it's that good. This is the perfect breakfast recipe to have on the go during a busy week as well!

Ingredients
  

For the parfait

  • 1/2 cup strawberries or raspberries
  • 1/2 cup blueberries
  • 1/2 cup gf high fiber granola(or you can substitute with your favorite granola)
  • 1 cup dairy free unsweetened vanilla yogurt
  • 2 tsp honey

For the gluten free high fiber granola

  • 2 cups gluten free rolled oats
  • 1/3 cup hemp hearts
  • 1/3 cup unsweetened shredded coconut
  • 1/3 cup sliced almonds
  • 1/3 cup melted coconut oil
  • 1/3 cup maple syrup
  • 1 tsp vanilla extract

Instructions
 

  • Mix all the granola ingredients in a large bowl. Spread out the granola on a baking sheet lined with parchment paper and bake for 20 minutes at 350 degrees.
  • Once the granola is done baking, set aside to cool completely.
  • Add the honey to the yogurt and whisk everything together well.
  • Chop the strawberries into smaller pieces and mix with the other berries.
  •  Assemble the parfait by layering the yogurt, berries, and gf high fiber granola.
  • Enjoy immediately or prep for breakfast the next day.
