Chocolate Peanut Butter Christmas Trees

If you want to make something simple yet delicious for the holidays, I definitely recommend making these adorable Chocolate Peanut Butter Christmas Trees! They are made with simple real food ingredients and taste just like Reese's Trees which was such a favorite growing up. The texture of the peanut butter filling is so thick and easy to roll out and make into trees using a cookie cutter. These trees are gluten, dairy, and refined sugar free as well!

Equipment

  • Mixing bowl
  • Small Tree cookie cutter
  • Parchment paper
  • Sheet pan

Ingredients
  

  • 1 1/4 cup creamy peanut butter
  • 1/3 cup powdered monk fruit or sugar
  • 1/4 cup maple syrup
  • 4 tbsp coconut flour(sifted)
  • 1 tbsp plus 1 tsp melted coconut oil
  • 1 1/2 cups dairy free chocolate chips
  • Sea salt flakes

Instructions
 

  • In a bowl, mix together the peanut butter, maple syrup, 1 tbsp melted coconut oil, coconut flour, and powdered monk fruit.
  • Mix until it becomes a thicker dough like texture. Place the peanut butter mixture in the fridge for a few minutes to chill.
  • Roll out the peanut butter mixture using a rolling pin into about 1/2 thick flat piece.
  • Use the tree cookie cutter to make a lot of cut outs and carefully peel the excess peanut butter around the trees.(You will probably need to roll out the peanut butter a couple times to get more cut outs.)
  • Place the peanut butter trees on a parchment paper lined sheet pan and freeze for 15 minutes.
  • In a bowl, add the dark chocolate chips and 1 tsp coconut oil. Melt using the microwave in 30-second increments or in a double boiler.
  • Take the peanut butter trees out of the freezer and dip them in the melted chocolate, then place on a parchment paper lined sheet pan. Drizzle more chocolate on top and cut the excess chocolate off around the edges.
  • Top with some sea salt flakes and enjoy!

Notes

Store in an air tight container and enjoy within 2 weeks! Best kept in the fridge for optimal freshness.
