This Chocolate Raspberry Pistachio Yogurt Bark has been an all-time hit for those mornings when you want something cool, sweet, and savory with the balance of fruit, nuts & most essential - chocolate! Enjoy this treat as a snack or breakfast while you load up on antioxidants, superfoods, and help fuel your body for the day ahead! This recipe is also dairy, grain, gluten, and refined sugar free.

Equipment

  • 1 Blender or Food Processor
  • 1 Toothpick
  • 1 Parchment paper lined pan

Ingredients
  

  • 2 cups Plain Dairy Free Yogurt
  • 1 cup Raspberries (plus a few extra)
  • 1/4 cup honey or maple syrup
  • 1/3 cup raw cashew or almond butter
  • 1/4 cup vanilla protein powder
  • 1/3 cup Melted Chocolate
  • 1/4 cup chopped pistachios

Instructions
 

  • In a blender or food processor, add the yogurt, raspberries, nut butter, honey, and vanilla protein powder. blend until smooth and there are no clumps.
  • Pour the yogurt mixture over a parchment paper lined sheet pan and spread out evenly using a spatula.
  • Melt the chocolate and drizzle over the yogurt mixture. Use a toothpick or straw to make swirls of the chocolate in the yogurt.(It looks so pretty!)
  • Add the chopped pistachios and some fresh raspberries on top of the yogurt and then place pan in the freezer for at least 2 hours to set.
  • Take pan out of the freezer and carefully chop your frozen yogurt into pieces
  • Store in the freezer and when ready to enjoy let sit at room temp for a couple of minutes before eating.
