Chocolate Raspberry Yogurt Clusters

These Chocolate Raspberry Yogurt Clusters are seriously my new favorite treat! They are the perfect healthy dessert or snack to make for the spring/summer season. They are made with only a few simple ingredients, and can store them in the fridge or in the freezer for a more ice cream like texture. They are so simple to make and are absolutely delicious! Warning: You may get chocolate all over your face while eating them haha!

Equipment

  • 1 Sheet pan
  • Parchment paper

Ingredients
  

  • 2 cups fresh raspberries
  • 1 1/2 cup dairy free vanilla or plain yogurt
  • 1/3 cup raw cashew or almond butter
  • 9 oz chocolate chips
  • 1/2 cup vanilla protein powder
  • 1 tbsp coconut oil
  • freeze dried raspberries

Instructions
 

  • Wash you raspberries and clean them well. Let them dry completely.
  • Mix together the nut butter, protein powder, and yogurt then fold in the raspberries until the berries are coated evenly.
  • Using a spoon, scoop out some of the berries and yogurt and place onto a parchment paper lined baking sheet. Form the berries and yogurt into 6-8 clusters.
  • Place clusters in the freezer for 30 mins or until frozen.
  • In a bowl, melt the chocolate and coconut oil together using the microwave or a double boiler.
  • Take the clusters out of the freezer and dip each one in the melted chocolate. Place them back into the sheet pan and allow the chocolate to harden.
  • Sprinkle some freeze dried raspberries on top.
  • Enjoy these clusters frozen or let them thaw in the fridge for 30 minutes before enjoying.

Notes

Store in the fridge for up to a week or store in the freezer for a few months.
