Cereal is always a classic, and enjoying it in bar form is so much fun! I love the combination of the rich chocolate and freeze-dried strawberries with the crunchy strawberry cereal. These chocolate strawberry cereal bars are SO easy to make, and they are a nice snack to have on hand throughout the week! I made these healthier by using refined sugar-free ingredients. These are also dairy and gluten-free.
Mix together the melted coconut oil and nut butter. Pour the creamy nut butter mixture over the cereal and stir until the cereal is completely coated.
Add the cereal to an 8x8 dish and spread out evenly, then flatten out the cereal using a spatula.
In a small sauce pan over low medium heat, warm the coconut milk with the chocolate and stir frequently. Stir until the chocolate is completely melted, then take off the stove.
Pour the chocolate ganache over the cereal and smooth out.
Spread out the freeze-dried strawberries over the chocolate and then place the dish in the fridge for 30 minutes to set.
Take the dish out of the fridge and then carefully cut into 9 cereal bars.
