Chocolate Strawberry Cereal Bars

Cereal is always a classic, and enjoying it in bar form is so much fun! I love the combination of the rich chocolate and freeze-dried strawberries with the crunchy strawberry cereal. These chocolate strawberry cereal bars are SO easy to make, and they are a nice snack to have on hand throughout the week! I made these healthier by using refined sugar-free ingredients. These are also dairy and gluten-free.

Equipment

  • 1 8x8 dish
  • Parchment paper

Ingredients
  

  • 3 cups gluten/grain free strawberry cereal
  • 1 cup raw cashew or almond butter
  • 1 tbsp melted coconut oil
  • 9 oz dairy free chocolate chips
  • 1 cup full fat coconut milk
  • 1 cup freeze dried strawberries

Instructions
 

  • Add the cereal to a large mixing bowl.
  • Mix together the melted coconut oil and nut butter. Pour the creamy nut butter mixture over the cereal and stir until the cereal is completely coated.
  • Add the cereal to an 8x8 dish and spread out evenly, then flatten out the cereal using a spatula.
  • In a small sauce pan over low medium heat, warm the coconut milk with the chocolate and stir frequently. Stir until the chocolate is completely melted, then take off the stove.
  • Pour the chocolate ganache over the cereal and smooth out.
  • Spread out the freeze-dried strawberries over the chocolate and then place the dish in the fridge for 30 minutes to set.
  • Take the dish out of the fridge and then carefully cut into 9 cereal bars.
