Cuisine American
- 20 Medjool dates(room temp)
- 1 cup dairy free chocolate chips
- Natural rainbow candy coated chocolate chips
- 1 tsp coconut oil(for melting with the chocolate chips)
For the Edible Brownie Batter
- 1 cup almond flour
- 1/2 cup chocolate protein powder
- 1/4 cup cacao powder
- 1 tbsp maple syrup or monk fruit
- 1/2 cup melted coconut oil
- 1/3 cup maple syrup
- 1 tsp vanilla extract
Carefully slice the dates open and remove the pits.
Line a sheet pan with parchment paper. Arrange the dates in 5 rows of 4, placing them close together. Use your hands to press the dates down and flatten them as much as possible.
Place another sheet of parchment paper over the dates. Using a rolling pin or a sturdy jar, roll firmly over the dates until they form one even, flattened layer.
In a bowl, combine the almond flour, chocolate protein powder, cocoa powder, maple syrup, melted coconut oil, and vanilla extract.
Stir until everything is well combined and a thick, fudgy brownie batter forms.
Spoon the brownie mixture over the flattened dates and spread it into an even layer, covering the dates completely.
Add the dairy-free chocolate chips and 1 teaspoon of coconut oil to a microwave-safe bowl. Microwave in 30-second intervals, stirring between each, until smooth and melted. You can also melt the chocolate using a double boiler.
Pour the melted chocolate over the brownie layer and spread it evenly across the surface.
Immediately sprinkle the rainbow candy-coated chocolate chips over the melted chocolate. Place the pan in the refrigerator for about 1 hour, or until the chocolate is completely set.
Remove the bark from the refrigerator and slice into pieces. Store in an airtight container in the fridge and enjoy throughout the week!
