Cucumber Lime Mint Refresher

I have always enjoyed cucumber water because it is so refreshing! This mocktail recipe takes it to the next level with added mint and lime. It is the perfect drink to hydrate on a hot summer day! Not only will it help quench your thirst, but it will also support the digestive system as well! You can make a huge batch of this cucumber lime mint mocktail and serve at a party or family get-together because everyone will love it!

  • 1 blender or juicer

Ingredients
  

  • 1 large cucumber cut into slices
  • Juice of 2 limes
  • 1/4 cup mint leaves
  • 4 cups filtered water
  • Ice
  • Sparkling water
  • Cucumber ribbons(optional)
  • Monk fruit drops or agave to sweeten(optional)

Instructions
 

  • Add the cucumber slices, lime juice, fresh mint leaves, and filtered water to a blender. Blend on high for about 1 minute, or until the cucumber and mint are fully broken down.
  • Pour the mixture through a fine-mesh strainer to remove the pulp, pressing gently with a spoon to get out as much liquid as possible. Transfer the cucumber-lime-mint water to a glass jug or pitcher and refrigerate until you're ready to serve.
  • Fill a serving glass with ice and add a few fresh lime slices or mint leaves.
  • Pour the chilled cucumber-lime-mint mixture over the ice, leaving a little room at the top. Finish with a splash of sparkling water.
  • Garnish with cucumber ribbons, fresh mint, or lime slices, and enjoy right away! The cucumber-lime-mint mixture can be stored in the refrigerator for up to 5 days.
