Equipment

  • 1 large pot

Ingredients

  • 8 cups chicken or veggie broth(low sodium)
  • 1 lb Italian sausage
  • 1 package gluten free pasta
  • 2 cans Italian diced tomatoes
  • 1 can full fat coconut milk
  • 1/4 cup coconut cream
  • 1/2 medium yellow onion(chopped)
  • 8 cloves garlic(minced)
  • 4 cups chopped green kale
  • 1 tbsp tapioca or arrowroot flour
  • Dairy free parmesan
  • 2 tbsp tomato paste
  • 1 tbsp dried basil
  • 2 tsp dried oregano
  • 2 tsp dried parsley
  • 1/4-1/2 tsp red chili flakes
  • 1 tsp dried thyme
  • 1 tsp salt

Instructions

  • Heat up a large pot on the stove top over medium heat and then add your Italian sausage. Chop up the Italian sausage into small pieces and cook completely until brown and slightly crisp. Take the sausage out of the pot and place in a bowl lined with some paper towels to soak up some of the grease.
  • Add the chopped onion and minced garlic to the pot and cook until the onions become tender and slightly translucent(about 5 minutes).
  • Add in the broth, diced tomatoes, and spices to the pot and bring to a boil.
  • Once the broth starts boiling, add in the pasta and cook according to the instructions on the package.(Usually around 10 minutes)
  • Once the pasta is fully cooked, add the coconut milk, coconut cream, chopped kale, and cooked Italian sausage into the pot.(Mix the tapioca flour with 2 tbsp water and add to the pot to thicken the soup a little.)
  • Cook the soup for a few minutes or until the kale becomes tender and then take the pot off the stove.
  • Serve in some bowls and top the soup with some dairy free parmesan and enjoy!
