Lemon Garlic Roasted Asparagus
When you need a simple side dish that tastes like you put in far more effort than you actually did, lemon garlic roasted asparagus is the answer. - 2 bunches of asparagus(about 2 pounds)
- 2-3 cloves garlic( can sub 2 tsp garlic powder)
- Juice of 1/2 a lemon
- 2 tsp avocado or olive oil
- 1 tsp flaky sea salt
Wash the asparagus and then trim the woody ends off. You can either carefully cut off the ends or bend each spear until it naturally snaps at the tender point.
Arrange the asparagus in a single layer on a parchment-lined baking sheet.
Using a garlic press, press the garlic cloves directly over the asparagus. Alternatively, finely mince the garlic. Drizzle the asparagus with the avocado oil.
Toss the asparagus until it is evenly coated with the avocado oil and garlic. Roast at 400°F for 20–22 minutes, or until the asparagus is lightly crisp around the edges while still retaining its bright green color.
Remove the asparagus from the oven and let it cool for a few minutes.
Just before serving, squeeze the juice from half a lemon over the roasted asparagus and finish with a sprinkle of flaky sea salt.
