No Bake Berry Tart

I love the time of year when berries are in season! They can be used in so many delicious recipes like this No Bake Berry Tart, which has an incredible flavor and is almost too pretty to eat! This recipe requires no baking and consists of simple, healthier ingredients that are dairy gluten and refined sugar free. This berry tart will make a fantastic Spring or Summer dessert to share with friends or family.

1 8 inch tart dish
1 Food Processor
- 1 cup raw cashews(soaked in hot water for an hour)
- 8 oz dairy free cream cheese
- 1/3 cup blueberries
- 1/3 cup maple syrup
- 1/4 cup coconut cream
- 1/4 cup melted coconut oil
- 2 cups pitted dates
- 1 cup unsweetened shredded coconut
- 4 tbsp coconut flour
- Fresh berries for topping and decorating tart
In a food processor, add the dates, shredded coconut, and coconut flour.
Process the ingredients until a dough-like consistency forms and then press the mixture into an 8 inch round tart dish.
In a blender or food processor, add the cashews, cream cheese, blueberries, maple syrup, coconut cream, and coconut oil.
Blend for a couple minutes on high power until a smooth and creamy consistency forms.
Pour the berry tart filling into the tart dish and spread out evenly. Place the berry tart in the fridge to set for 3 hours.
When ready to serve, top with fresh berries and enjoy!
