Peanut Butter Robin Eggs

These Peanut Butter Robin Eggs are such a fun and colorful dessert to make for Easter! They have the most perfect sweet and creamy peanut butter filling and are coating with a naturally dyed white chocolate. They might look fancy but are actually really easy to make I promise! This recipe is also made with healthier ingredients that are dairy, gluten and refined sugar free!

Ingredients
  

  • 1 1/4 cups creamy peanut butter
  • 1/4 cup maple syrup
  • 1/3 cup powdered monk fruit
  • 8 tbsp coconut flour
  • 1 tbsp + 2 tsp melted coconut oil
  • 9 oz dairy free white chocolate chips
  • 1 tsp blue spirulina powder
  • 1/4 tsp matcha powder
  • 1 tsp black cocoa powder
  • 1 tbsp filtered water

Instructions
 

  • In a bowl, mix together the peanut butter, maple syrup, 1 tbsp melted coconut oil, coconut flour, and powdered monk fruit or sugar.(It helps to sift the coconut flour and powdered monk fruit through a strainer.)
  • When the peanut butter mixture is thick, divide it into 12 balls and form into egg shapes.
  • Place the peanut butter eggs on a parchment paper lined sheet pan and set in the freezer for at least 1 hour.
  • To make the robin egg colored chocolate, first melt the white chocolate chips with 2 tsp coconut oil in the microwave in 30 second increments.(You can also use a double boiler.)
  • When the chocolate is completely melted, add the blue spirulina powder and matcha powder and whisk very well. the color should look like a slightly greenish blue like an actual robin egg.
  • Take the peanut butter eggs out of the freezer and the using a fork dip each egg in the chocolate and use a spoon to pour over the chocolate evenly and then place the egg back on the parchment paper to set.
  • In a small bowl, whisk the black cocoa powder and filtered water. Dip the paint brush in the cocoa water and then run your finger over the brush by the eggs to flick and make speckles on the eggs.(This might take some practice and be sure to put a large towel underneath the space your making them on)
  • When you are done adding speckles on the eggs let them set for a few minutes to dry.
  • Cut off any access chocolate around the bottom of the eggs and then store in an air tight container.
  • Enjoy them within 1 week for the best flavor and texture.
