Pecan Pie Truffles

Pecan Pie in truffle form I think yes! These truffles are made with simple real food ingredients and are Gluten Free, Vegan, and Paleo. I love my treats in bite form and they are the perfect thing to satisfy your sweet cravings this holiday season. Trust me you NEED these in your life!

Ingredients
  

  • 1 cup creamy almond or pecan butter
  • 2 cups pitted dates(room temp and cut into smaller pieces
  • 1/2 cup chopped pecans
  • 1/2 cup almond flour
  • 2 tsp vanilla extract
  • 1 1/2 cups chocolate chips
  • 1 tsp coconut oil
  • 1/8 tsp sea salt

Instructions
 

  • Add the dates, almond butter, pecans, vanilla extract, and almond flour into a food processor. Process until a dough like texture.
  • Roll the pecan pie mixture into about 20 balls. Place ball in the freezer for 30 mins.
  • Melt your chocolate chips with the coconut oil in a double boiler or in the microwave for 30 second increments.
  • Take the pecan pie balls out of the freezer and dip each one in the melted chocolate and coat evenly. Place them on a parchment paper lined baking sheet.
  • Once the chocolate is set, drizzle more chocolate on top and sprinkle some chopped pecan pieces.
  • Store in the fridge and enjoy throughout the week!
