Peppermint Cream Filled Chocolate Trees

For all my chocolate-mint lovers out there, this one is for you! These peppermint cream filled chocolate trees are a fun festive treat to share with friends and family! They are made with better for you ingredients and taste almost like an Andes mint but even BETTER! The filling is so creamy and is made with coconut cream, coconut butter, a natural green food coloring, and peppermint flavoring. They are seriously "melt-in-your-mouth" goodness!

- 2 cups dairy free chocolate chips
- 2 tsp coconut oil
- 1/2 cup coconut cream
- 1/4 cup coconut butter
- 1 1/2 tsp peppermint extract
- 1 1/2 tbsp powder monk fruit or sugar
- Natural green food coloring
- Natural festive sprinkles(optional)
Melt the chocolate chips with the coconut oil in a microwave safe dish. Heat in 30-second increments and stir in between.(You can also use a double boiler if you don't want to use the microwave.)
Add 1 tsp peppermint extract to the melted chocolate and stir well.
Add a couple of spoonfuls of the melted chocolate to the Christmas tree silicone mold and spread out well, including up the side a little bit. Place in the freezer for a few minutes to harden.
In a bowl, mix together the coconut cream, melted coconut butter, green food coloring, powdered monk fruit, and the other 1/2 tsp peppermint extract.
Take the mold out of the freezer and add a couple of spoonfuls of the peppermint cream mixture, leaving a little room on the sides. Place in the freezer for a few minutes to set.
Add the rest of the melted chocolate on top of the chocolate trees and place back in the freezer for a few minutes.
Take the chocolate trees out of the mold and drizzle a little more chocolate on them and add some festive sprinkles.
Store in the fridge and enjoy!
