This vibrant Pink Pitaya Kiwi Nojito is a fun hydrating drink to enjoy during the summertime. Not only is it colorful and stunning, but it tastes so delicious with fruity flavors mixed with lime and mint. - 1/4 cup pink dragon fruit(or puree)
- 1 kiwi
- A few fresh mint leaves
- 2/3 cup coconut water
- 1/2 cup sparkling water
- Juice of one lime
- 1/4 tsp liquid monk fruit
- 2 cups ice
Carefully cut your pink dragon fruit and kiwi into small cubes.
Add the pink dragon fruit and kiwi to a serving glass along with a few mint leaves. Use a muddler to mash and release the juices.
Add the lime juice, monk fruit, and some ice to full the glass.
Pour over the coconut water and then the sparkling lime water. Stir the drink well until it's vibrant and pink.
Garnish with fresh fruit and mint then enjoy!
