This Pumpkin Pie Chia Pudding is the perfect thing to prepare for breakfast for a busy week! It's got all the delicious warming spices plus eating layered food is way more fun in my opinion. - 1 can full fat coconut milk
- 1 cup coconut or almond milk
- 1/2 cup chia seeds
- 1/2 cup pumpkin puree
- 1/3 cup maple syrup
- 1 tbsp pumpkin spice
- 2 tsp vanilla extract
Add the chia seeds, full fat coconut milk, almond milk, pumpkin puree, maple syrup, pumpkin spice, and 1 tsp vanilla extract in a bowl.
Whisk everything together and then store in a container in the fridge to set for 4 hours or overnight.
Separate the chia pudding into 3 jars to prep for enjoying during the week.
When ready to enjoy, top with whip cream, granola, or sautéed apples and enjoy!
