Raw Carrot Ribbon Salad

Raw carrots are honestly one of my favorite things to eat during the summer because they have a sweet flavor and crisp texture that satisfies. I was so excited when I saw this trending salad and knew I had to make it! Raw carrots have so many benefits as well as tasting delicious. They are high in beta carotene, which the body converts to vitamin A, which plays a big role in glowing skin health and vision health! They are also rich in fiber, which supports healthy digestion as well!

Equipment

  • 1 vegetable peeler

Ingredients
  

  • 8-10 rainbow carrots
  • 4 green onions sliced
  • 1 tbsp coconut aminos
  • 1 tbsp Toasted sesame oil
  • 1 tbsp maple syrup
  • 1 tbsp rice vinegar
  • Juice of 1/2 a lime
  • Sesame seeds for garnishing

Instructions
 

  • Carefully peel the carrots into ribbons using a wide vegetable peeler and place them into a large bowl.
  • Add in the chopped green onions, coconut aminos, toasted seasame oil, maple syrup, rice, vinegar, and lime juice.
  • Using tongs or clean hand massage and mix around the marinade with the carrot ribbons.
  •  Top with seasame seeds, more green onions, or other fresh herbs if desired.
  • Eat the carrot salad right away or chill in the fridge for a few minutes before serving and enjoy!
