Strawberry Bounty Bars

I've you've never had a Bounty Bar before, it is basically an almond joy without the almonds and has such a delicious coconut chocolate flavor that just melts in your mouth! These Strawberry Bounty Bars have a fun fruity flavor twist on the classic version, and they are probably one of my new favorite candy bars! They are very easy to make, and only require 5 simple healthier ingredients.

Equipment

  • Food Processor
  • Silicone candy bar molds
  • Parchment paper

Ingredients
  

  • 3 cups unsweetened shredded coconut
  • 2 cups freeze dried strawberries
  • 1/3 cup maple syrup
  • 1/3 cup coconut oil.
  • 1 1/4 DF Chocolate Chips

Instructions
 

  • Add the shredded coconut, freeze dried, coconut oil, and maple syrup to a food processor.
  • Process the ingredients for about 1-2 minutes
  • Take the strawberry coconut mixture and add it into silicone candy bar molds or shape them into bars by hand.
  • Place the strawberry coconut bars in the freezer for 1 hour.
  • Melt the chocolate chips in a bowl either in the microwave in 30-second increments or in a double boiler.
  • Take the strawberry coconut bars out of the freezer and dip each one in the melted chocolate and then place them on a parchment paper lined sheet pan to set.
  • Drizzle some more chocolate on top and sprinkle some freeze-dried strawberries on top.
  • Enjoy within 1 week of making.
