Thai Style Chicken Salad

I used to always just have roasted or baked chicken with steamed veggies, and that definitely got old after a while! There are so many fun and delicious ways to prepare chicken, and I have really been enjoying this Thai style chicken salad. This recipe is great to prep for lunches during the week and you can enjoy it with radish(I personally love watermelon radishes) or cucumber slices, crackers, or even eat it as a wrap. It’s packed with protein, fiber, and flavor! I could also just eat the creamy Thai peanut dressing by the spoonful it’s just that good!

What you will need

Shredded Chicken – You can either cook your own chicken and shred it or use precooked rotisserie chicken.

Carrots – This nutrient dense veggie adds a nice sweet flavor to the Thai chicken salad.

Cilantro – This herb is great for supports the body’s detoxification of heavy metals! It also adds a fresh flavor to many dishes.

Green Onions – Also known as scallions, this small yet powerful onion is rich in prebiotic fiber that helps feed the good bacteria in our gut.

Sliced Almonds – I love to add slices almonds in this salad for a fun crunchy texture! Almonds are also a great source of essential minerals such as magnesium, phosphorus, and potassium.

Watermelon Radish Slices – I just love how gorgeous these radishes are! They have a natural vibrant pink color and add a have a slight spicy kick to them. I like to serve the Thai salad on top of some radish slices, but you can use crackers as well.

For the Thai peanut dressing

DF Yogurt – My favorite brand to use is Culina. It’s coconut based and made with simple clean ingredients!

Peanut Butter – I recommend using an organic creamy peanut butter that is made with just one ingredient: peanuts! I love the brand Spread the Love because they don’t add any sugars or poor quality oils.

Coconut Aminos This is a great substitute for soy sauce and has amore sweet flavor.

Garlic – This adds a great flavor to the dressing and more nutritional value! Garlic is great for immune support!

Toasted Sesame Oil – This gives the dressing an Asian flavor note that hits so well in the dressing.

Rice Vinegar – This vinegar is know to help support digestion, reduce inflammation, and improve skin health.

Lime Juice – Adding some lime juice gives this dressing a tangy flavor that taste so delicious.

How to make the Thai style chicken salad

First, Make your shredded chicken by cutting 2 chicken breasts into small pieces and cooking either in an Instant pot with 1 cup water for 10 minutes or or boil them in a pot on the stove until fully cooked. Shred with 2 forks or use a hand mixer, then set aside.(You could use precooked rotisserie chicken as well.)

Next, make the Thai peanut dressing by adding all the ingredients into a small food processor or blender and blend for a minute for a smooth, creamy consistency. Then add the shredded chicken, chopped cilantro, shredded carrots, green onions, and almond slices into a bowl. Pour the Thai peanut dressing over top of the salad and mix up everything using some salad tongs. Mix well so everything is coated evenly with the dressing.

Slice some watermelon radishes into rounds or use crackers to serve with the chicken salad and enjoy! (You could even make this into a wrap!) The chicken salad is best enjoyed within 5 days.
