Blueberry Protein Ice Cream

Ever since I got a Ninja Creami ice cream maker, I have been having so much fun creating different ice cream recipes! I thought it would be so fun to make a blueberry version, and this recipe definitely doesn't disappoint! This recipe is packed with protein, antioxidants, and healthy fats! Ice cream with benefits is the way to go, and this may become your new favorite healthier frozen treat!

- 2 cups full fat coconut milk
- 2 cups blueberries(thawed frozen ones work best)
- 1/3 cup vanilla protein powder
- 1/3 cup raw cashew or almond butter
- 1/3 cup honey
- 1/4 cup coconut cream
- 1 tbsp vanilla extract
- 1 tbsp purple sweet potato powder(optional)
Add the coconut milk, blueberries, vanilla protein powder, cashew or almond butter, honey, coconut cream, and vanilla extract to a blender.
Blend on high for 1-2 minutes until a smooth creamy consistency forms.
Pour the ice cream mixture into 2 pint size containers used for an ice cream maker and freeze for 12 hours. (Or you can follow the directions of your favorite ice cream maker.)
Once the ice cream is churned and frozen, add a couple of scoops to a bowl, top with fresh blueberries, and enjoy!
