Blueberry Protein Ice Cream

Ever since I got a Ninja Creami ice cream maker, I have been having so much fun creating different ice cream recipes! I thought it would be so fun to make a blueberry version, and this recipe definitely doesn’t disappoint! This recipe is packed with protein, antioxidants, and healthy fats! Ice cream with benefits is the way to go, and this may become your new favorite healthier frozen treat!

What you will need

Blueberries – Using thawed frozen blueberries works best because they are more juicy and flavorful.

Coconut Milk – I use full fat coconut milk from the can to get a very creamy consistency.

Vanilla Protein Powder – I use a plant based protein powder but you can use your favorite vanilla protein powder in this recipe.

Cashew Butter – Using raw cashew butter makes the texture of the ice cream more soft and less icy! You can substitute with almond butter if you’d prefer.

Honey – This is my preferred sweetener for the ice cream cut you can also use maple syrup or monk fruit.

Coconut Cream – Using full fat coconut cream from the can makes this ice cream extra thick and creamy.

Vanilla Extract – This gives the blueberry protein ice cream a nice flavor note.

Purple Sweet Potato Powder – This is optional but gives the blueberry ice cream a very pretty purple color and adds to the antioxidant profile.

How to make the blueberry protein ice cream

  1. Add the coconut milk, blueberries, vanilla protein powder, cashew or almond butter, honey, coconut cream, and vanilla extract to a blender.
  2. Blend on high for 1-2 minutes until a smooth creamy consistency forms.
  3. Pour the ice cream mixture into 2 pint size containers used for an ice cream maker and freeze for 12 hours. (Or you can follow the directions of your favorite ice cream maker.)
  4. Once the ice cream is churned and frozen, add a couple of scoops to a bowl, top with fresh blueberries, and enjoy!

Ingredients

  • 1/4 cup coconut cream
  • 1 tbsp vanilla extract
  • 1 tbsp purple sweet potato powder(optional)

  • Add the coconut milk, blueberries, vanilla protein powder, cashew or almond butter, honey, coconut cream, and vanilla extract to a blender.
  • Blend on high for 1-2 minutes until a smooth creamy consistency forms.
