Cacao Matcha Protein Cups

I love making these Cacao Matcha Protein Cups because they are a great treat to have on hand during the busy week! They are loaded with healthy fats from coconut oil and macadamia coconut butter. The combination of matcha and these fats are the perfect brain booster to start off your day or for an afternoon pick me up! They are plant based, grain free, and refined sugar free as well!

For the chocolate crust layer
- 1/2 cup almond flour
- 1/4 cup coconut flour
- 1/4 cup cocoa powder
- 2 tbsp melted coconut oil
- 2 tbsp maple syrup or powdered monk fruit
- 1 tbsp nut milk
For the matcha protein layer
- 1 cup macadamia or raw cashew butter
- 3 scoops vanilla protein powder
- 2 tsp matcha
- 1-2 tbsp maple syrup or powdered monk fruit
- 1 tbsp melted coconut oil
- 1 tsp vanilla extract
- 1/4 cup chocolate chips
In a bowl, mix together all your crust Ingredients.
Spoon the crust mixture evenly into 10 muffin cups.
Add all your matcha filling ingredients into a bowl except for the chocolate chips. Mix together until everything in well incorporated.
Add a spoonful of filling into each muffin cup.
Top with some chocolate chips and then put the cups in the fridge for at least 30 mins to set.
Store them in the fridge and enjoy them throughout the week!
