Cacao Matcha Protein Cups

I love making these Cacao Matcha Protein Cups because they are a great treat to have on hand during the busy week! They are loaded with healthy fats from coconut oil and macadamia coconut butter. The combination of matcha and these fats are the perfect brain booster to start off your day or for an afternoon pick me up! They are plant based, grain free, and refined sugar free as well! 

What You will need

Almond Flour – I love using almond flour as a gluten free/ paleo alternative flour! It’s more nutrient dense and contain vitamins, minerals, and fiber!

Coconut Flour – This is another gluten free/ paleo flour that is low carb and nutrient dense! I like to often combine it with almond flour to get a good texture!

Cacao Powder – I use an organic fair trade cacao powder in my recipes!

Coconut Oil – This is a great healthy fat to use in treats! Coconut oil has been shown to support a healthy microbiome and brain health!

Maple Syrup – I like to use maple syrup to sweeten this recipe, but you can also substitute with honey or monk fruit.

Nut Milk – I use almond milk but you can use any alternative milk of choice!

Raw Macadamia Butter – I am obsessed with the Mac-Coconut butter by Artisana Organics! Macadamia nut butter and coconut butter are great sources of healthy fats and are generally low on the glycemic index. You can also substitute with raw cashew butter as well.

Vanilla Protein Powder – You can use either a plant based protein powder or animal based. I enjoy using a vanilla collagen protein powder personally!

Matcha Powder – Matcha is so rich in antioxidants like EGCG, It supports energy without all the jitters due to it having lots of L-theanine, and it is a great brain booster!

Vanilla Extract – You can never go wrong with more vanilla flavor!

Chocolate Chips – I personally love dark chocolate chips, but you can use any kind you prefer. I use dairy free stevia sweetened ones!

How to make the cacao matcha protein cups

First, make your crust layer by mixing together the coconut flour, almond flour, cacao powder, maple syrup, nut milk, and melted coconut oil. Spoon crust mixture into 10 muffin cups and press down evenly.

Make your matcha protein layer by mixing together the macadamia nut butter, matcha, melted coconut oil, vanilla protein powder, maple syrup, and vanilla extract. Spoon mixture into the muffin cups evenly.

Top the cups with some chocolate chips and then place in the fridge for at least 30 mins to set. Keep them in the fridge and enjoy throughout the week!

  • Silicone muffin cups

Ingredients
  

For the chocolate crust layer

  • 1/2 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 cup cocoa powder
  • 2 tbsp melted coconut oil
  • 2 tbsp maple syrup or powdered monk fruit
  • 1 tbsp nut milk

For the matcha protein layer

  • 1 cup macadamia or raw cashew butter
  • 3 scoops vanilla protein powder
  • 2 tsp matcha
  • 1-2 tbsp maple syrup or powdered monk fruit
  • 1 tbsp melted coconut oil
  • 1 tsp vanilla extract
  • 1/4 cup chocolate chips

Instructions
 

  • In a bowl, mix together all your crust Ingredients.
  • Spoon the crust mixture evenly into 10 muffin cups.
  • Add all your matcha filling ingredients into a bowl except for the chocolate chips. Mix together until everything in well incorporated.
  • Add a spoonful of filling into each muffin cup.
  • Top with some chocolate chips and then put the cups in the fridge for at least 30 mins to set.
  • Store them in the fridge and enjoy them throughout the week!
