Chocolate Chip Cookie Dough Eggs

I thought it would be so fun to make an edible chocolate chip cookie dough eggs recipe and these definitely don't disappoint! They are made with healthier ingredients, and have a creamy cashew butter cookie dough filling that is coated in dark chocolate with a little flaky sea salt. 10/10 definitely recommend and the whole family will love them!

Equipment

  • Sheet pan
  • Parchment paper
  • Mixing bowl

Ingredients
  

  • 1 1/4 cups raw cashew or almond butter
  • 1/3 cup maple syrup
  • 1/2 cup almond flour
  • 2 tbsp coconut flour(sifted)
  • 2 tsp vanilla extract
  • 1 3/4 cups chocolate chips
  • 1 tsp coconut oil
  • Sea salt flakes(optional)

Instructions
 

  • In a bowl, mix together the cashew butter, maple syrup, almond flour, coconut flour, 1/2 cup chocolate chips, and vanilla extract.
  • Roll the cookie dough batter into 16 balls and then mold into egg shapes.
  • Place the cookie dough eggs on a parchment paper lined sheet pan and place in the freezer for 20 minutes.
  • Melt the remaining chocolate chips with the coconut oil in the microwave or on the stove top in a double boiler.
  • Take the cookie dough eggs out of the freezer and then dip each one in the melted chocolate.
  • Place them back on the parchment paper to set, then drizzle some extra chocolate on top.
  • Sprinkle some flaky sea salt on top of the eggs and enjoy!
