Chocolate Chip Cookie Dough Eggs

I always looked forward to all the delicious Easter candy growing up like the classic Reese’s chocolate peanut butter eggs(Check out my copycat version HERE) and other chocolate egg shaped candies. I thought it would be so fun to make an edible chocolate chip cookie dough eggs recipe and these definitely don’t disappoint! They are made with healthier ingredients, and have a creamy cashew butter cookie dough filling that is coated in dark chocolate with a little flaky sea salt. 10/10 definitely recommend and the whole family will love them!

What you will need

Cashew Butter – I prefer to use a raw cashew butter to give more of a cookie sweet dough flavor that isn’t too nutty tasting. You could also use a raw almond butter as well!

Maple Syrup – This is what we will use to sweeten the cookie dough filling with.

Almond Flour – We will use some almond flour to get that cookie dough consistency.

Coconut Flour – Adding a little bit of coconut flour helps absorb the oils from the nut butter making it less sticky and easy to shape.

Chocolate Chips – You can use any brand of chocolate chips but I like to use ones that are dairy and refined sugar free if possible.

Vanilla Extract – This adds a nice sweet flavor note to the cookie dough filling.

Coconut Oil – We will melt a little bit of coconut oil with the chocolate to help thin it out for dipping the cookie dough eggs.

Sea Salt – Adding a touch of flaky sea salt on top is definitely recommended.

How to make the chocolate chip cookie dough eggs

Make the Cookie Dough

First in a bowl, mix together the cashew butter, maple syrup, almond flour, coconut flour, 1/2 cup chocolate chips, and vanilla extract. Then, roll the cookie dough batter into 16 balls and then mold into flattened egg shapes. Place the cookie dough eggs on a parchment paper lined sheet pan and place in the freezer for 20 minutes.

Coat the Chocolate Chip Cookie Dough Eggs

Next, melt the remaining chocolate chips with the coconut oil in the microwave or on the stove top in a double boiler. Take the cookie dough eggs out of the freezer and then dip each one in the melted chocolate.

Add the Toppings

 Place them back on the parchment paper to set, then drizzle some extra chocolate on top. Sprinkle some flaky sea salt on top of the eggs and enjoy!

  • 2 tsp vanilla extract

  • Sea salt flakes(optional)
