colorfulsuperfoodie
I have always enjoyed cucumber water because it is so refreshing! This mocktail recipe takes it to the next level with added mint and lime. It is the perfect drink to hydrate on a hot summer day! Not only will it help quench your thirst, but it will also support the digestive system as well! You can make a huge batch of this cucumber lime mint mocktail and serve at a party or family get-together because everyone will love it!

Equipment

  • 1 blender or juicer

Ingredients

  • 2 large cucumbers
  • Juice of 2-3 limes
  • 1/2 cup mint leaves
  • 4 cups filtered water
  • Ice
  • Cucumber ribbons(optional)
  • Monk fruit drops to sweeten(optional)

Instructions

  • Chop the 2 cucumbers into smaller pieces and add to a blender along with the mint leaves, lime juice, and monk fruit.(If you have a juicer, you can just add it to that.)
  • Blend everything on high for 30 seconds. Strain the mixture to get all the juice and leave out the pulp.
  • In a serving glass, add ice, a few mint leaves, and a couple of lime slices.
  • Pour over the cucumber mint lime juice and garnish with a cucumber ribbon. (You can make the cucumber ribbons by using a wide peeler on the cucumber and then skewer with a cocktail pin.)
  • Enjoy as a refreshing drink throughout the week or serve at a party.
