Cucumber Lime Mint Mocktail

I have always enjoyed cucumber water because it is so refreshing! This mocktail recipe takes it to the next level with added mint and lime. It is the perfect drink to hydrate on a hot summer day! Not only will it help quench your thirst, but it will also support the digestive system as well! You can make a huge batch of this cucumber lime mint mocktail and serve at a party or family get-together because everyone will love it!

What you will need

Cucumbers – You will need 2 large cucumbers for this recipe. Cucumbers are mostly made up of water, and that is why they are a summer staple to stay hydrated!

Limes – This citrus fruit is high in antioxidants and provides many health benefits such as immune support due to it’s high vitamin C levels, promotes healthy skin, and has anti-inflammatory properties.

Mint Leaves – Adding mint to mocktails adds such a fun fresh flavor! I also love mint because it supports a healthy digestive system and I always feel great afer I drink something with it!

Filtered Water – I always use filtered water because tap water contains some questionable properties that can negatively affect our health.

Ice – You can use crushed or fun shaped ice made in a silicone mold. I like to use this mold here.

Monk Fruit Drops – This is optional if you like your drinks more on the sweet side.

Cucumber Ribbons – This is such a pretty garnish for this mocktail! To make a cucumber ribbon, you will need a wide peeler and a cocktail pin.

How to make the cucumber lime mint mocktail

First, chop the 2 cucumbers into smaller pieces and add to a blender along with the mint leaves, lime juice, and monk fruit.(If you have a juicer, you can just add it to that). Blend everything on high for 30 seconds. Strain the mixture to get all the juice and leave out the pulp. (I like to use a nut milk bag to strain it well).

Next, in a serving glass(or glasses) add ice, a few mint leaves, and a couple of lime slices for a pretty layered look. Pour over the cucumber mint lime juice and garnish with a cucumber ribbon. (You can make the cucumber ribbons by using a wide peeler on the cucumber and then skewer with a cocktail pin.)

This recipe makes about 5-6 servings, and can be doubles if serving more people. You can enjoy this drink throughout the week or serve at a party!
