- 2/3 cup almond flour
- 1/4 cup coconut flour
- 1 cup raw cashew butter
- 2 scoops vanilla protein powder
- 1/2 cup pumpkin puree
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- 1/4 tsp Himalayan salt
- 1 tsp pumpkin spice
- 1/2 cup chocolate chips
In a bowl, mix together cashew butter, maple syrup, pumpkin puree, and vanilla extract.
In a separate bowl, mix together the almond flour, coconut flour, protein powder, pumpkin spice, and salt.
Combine the wet and dry ingredients then fold in the chocolate chips.
Place the cookie dough in an air tight container in the fridge.
Let the cookie dough chill for a couple hours before enjoying.
