Edible Pumpkin Chocolate Chip Cookie Dough
Enjoying a spoonful of delicious cookie dough is so special and is almost better than eating it baked. This edible Pumpkin Chocolate Chip Cookie Dough is definitely worth making! It’s high in protein, healthy fats and fiber. It’s also dairy, gluten, grain, and refined sugar free. I love to just eat it by the spoonful and you will too.

What you will need
Almond and Coconut Flour – These are great gluten/grain free flours that help make the cookie dough consistency. These flours are also rich in fiber.
Raw Cashew Butter – This ingredient helps solidify the cookie dough when chilled. Raw cashews are a great source of healthy fats, fiber, and protein. They also have heart health supporting properties.
Vanilla Protein Powder – I love adding protein powder or collagen to my treats to make them more balanced and satisfying. I used a plant based protein powder by Truvani in this pumpkin chocolate chip cookie dough but you can use any protein or collagen you like.
Pumpkin Puree – Pumpkin is such a great food to enjoy during the fall season. It’s rich in fiber, antioxidants, and beta-carotene.
Maple Syrup – This is my preferred sweetener for this recipe but you could also use honey or monk fruit.
Vanilla Extract – This adds a nice flavor to the cookie dough and brings out the sweetness.
Pumpkin Spice – I highly recommend adding some of this spice to the cookie dough to really bring out the pumpkin flavor.
Chocolate Chips – I used some dairy free stevia sweetened chocolate chips in the recipe but you can substitute with regular chocolate chips if you’d like. No judgment here!
Salt – adding a touch of salt balances out the sweet flavor and pairs well with the chocolate.


How to make the edible pumpkin chocolate chip cookie dough
- In a bowl, mix together cashew butter, maple syrup, pumpkin puree, and vanilla extract.
- In a separate bowl, mix together the almond flour, coconut flour, protein powder, pumpkin spice, and salt.
- Combine the wet and dry ingredients then fold in the chocolate chips.
- Place the cookie dough in an air tight container in the fridge.
- Let the cookie dough chill for a couple hours before enjoying.
