Grilled Herb Citrus Chicken Skewers

If you're looking for a fun way to mix up your chicken and veggies, this recipes is totally for you! There is just something so fun about eating food off a skewer fresh off the grill during the summertime! These grilled herb citrus chicken skewers are pretty easy to make either on the grill, in an air fryer, or roasted on the oven.

Wooden Skewers
- 3 large chicken breasts
- 15-20 mini sweet peppers
- 1 medium size red onion
- 2 medium size zucchini
- 2 medium size yellow summer squash
- 1 bottle citrus herb marinade*
- Juice of 2 limes
- 2 tbsp avocado oil
- 1/2 tsp garlic powder
- 2 tsp citrus herb seasoning
- Himalayan salt
Cut the chicken breasts into 1 inch thick cubes. Place in a bag along with the citrus herb marinade and lime juice and leave it in the fridge for at least six hours or overnight to soak in the flavor.
Cut the zucchini and yellow squash into small round slices and add to a bowl with the garlic powder, seasoning, a little salt, and the avocado oil. Coat evenly and set aside.
Cut your onion and peppers into smaller pieces and set aside.
Take the marinated chicken out of the fridge and grab your skewers(make sure to presoak your skewers in water for 30 minutes). Assemble your skewers by alternating the veggies with the meat on the skewers.
Heat up your grill or air fryer on medium high. Cook them for about 10 mins flipping them halfway through. Let cool for a few minutes before enjoying!
Soak your wooden skewers in some water for 30 mins before using to prevent them from burning so much.
*I used the brand The New Primal citrus herb marinade and seasoning in this recipe which are made with very clean ingredients.
