Grilled Herb Citrus Chicken Skewers
If you’re looking for a fun way to mix up your chicken and veggies, this recipes is totally for you! There is just something so fun about eating food off a skewer fresh off the grill during the summertime! These grilled herb citrus chicken skewers are pretty easy to make either on the grill, in an air fryer, or roasted on the oven.

What you will need
Chicken – The kind of meat you want to use is chicken breasts. I use an organic kind from the brand Mary’s.
Peppers – I used mini sweet peppers in this recipes because I think they are more flavorful! You can of course use regular bell peppers as well.
Red Onion – Red onions have a more sweet taste to them than yellow onions. When you grill them up the flavor turns out fabulous!
Zucchini and Summer Squash – Who doesn’t love grilled zucchini and yellow summer squash? When you add a citrus seasoning to them, it makes the next level.
Citrus Herb Marinade – Letting the chicken marinade for a few hours really makes all the difference when grilling. I use the brand The New Primal and it is Whole30 and Paleo!
Avocado Oil – This is a great high quality cooking oil for high heat. Most processed vegetable oils become rancid when heated up and causes inflammation in the body. My favorite avocado oil to use is the Primal Kitchen one.
Lime Juice – I add this to the marinade for the chicken to give a fresh citrus flavor.
Seasonings – I use a blend of garlic powder, Himalayan salt, and a citrus herb seasoning by The New Primal.
Equipment
Air Fryer – I used my Ninja Foodie Air Fryer/Grill but you could also make them in a regular grill or roasted in the oven.
Skewers – You can use wooden or metal ones. If you are using wooden ones, soak them in water for 30 mins before cooking to keep them from burning.

How to make the grilled herb citrus chicken skewers
First, cut the chicken breasts into 1 inch thick cubes. Place in a bag along with the citrus herb marinade and lime juice and leave it in the fridge for at least six hours or overnight to soak in the flavor.
Next, cut the zucchini and yellow squash into small round slices and add to a bowl with the garlic powder, seasoning, a little salt, and the avocado oil. Coat evenly with the oil and spices then set aside. Also cut the red onion and peppers into smaller pieces and set aside.
Then, take the marinated chicken out of the fridge and grab your skewers(make sure to presoak your skewers in water for 30 minutes). Assemble your skewers by alternating the veggies with the meat on the skewers. Heat up your grill or air fryer on medium high. Cook them for about 10 mins flipping them halfway through. Let cool for a few minutes before enjoying!
