Cuisine American
- 1 1/2 cups dry roasted peanuts
- 1 cup coconut cream
- 1/2 cup coconut sugar
- 1/2 cup creamy peanut butter
- 1/4 cup coconut flour(sifted)
- 1 tsp vanilla extract
In a pan on the stove over medium heat, add the coconut cream, coconut sugar, and vanilla extract.
When the mixture starts bubbling a lot, turn the heat down to low and let simmer for 15 mins. (Make sure to stir the mixture often.)
Once done, set the caramel aside to cool for a few minutes. Add the peanut butter and coconut flour to the caramel mixture and whisk until well incorporated.
In the silicone candy bar mold, add a layer of peanuts to each mold covering the bottom.(If adding to an 8x8 dish, add parchment paper and then add a layer of peanuts.)
Pour the peanut butter caramel mixture evenly over top of the peanuts, then top with more roasted peanuts.
Stick in the freezer for at least an hour. Then take the candy bars out of the mold and store in the fridge.(Take out of the dish and cut into bars then store.)
