Healthier Payday Bars
Payday bars are definitely underrated in my opinion, and I am sad I didn’t enjoy more of them growing up. However it’s not too late because I created this delicious healthier payday bar recipe that us super easy to make. I mean who doesn’t love a creamy melt in your mouth peanut butter caramel coated in roasted peanuts! This recipe is only made with 6 ingredients and it refined sugar free which is always a plus!

What you will need
Peanuts – I like to use dry roasted organic peanuts! Unfortunately a lot of peanut crops are sprayed with lots of pesticides and are easily contaminated with mold exposure. Buying organic peanuts helps avoid those issues mostly.
Coconut Cream – Make sure to use full fat coconut cream from the can!(no liquid part) This is what makes the caramel so creamy.
Peanut Butter – Make sure to find a creamy organic peanut butter that doesn’t have added sugars or oils! I like the brand MaraNatha
Coconut Sugar – This is what we will use to sweeten the caramel with. This sweetener is a healthier alternative to brown sugar, and is lower on the glycemic index.
Coconut Flour – A great helps thicken the caramel sauce into more of a nougat texture. Make sure to sift it first because it can be kind of clumpy.
Vanilla Extract – This adds a nice flavor note to the peanut butter caramel.

How to make the healthier payday bars
First make your peanut butter caramel sauce by adding the coconut cream, coconuts sugar, and vanilla extract to a small sauce pan over medium heat. When the mixture starts bubbling a lot, turn the heat down to low and let simmer for 15 mins. (Make sure to stir the mixture often.)


Once done, set the caramel aside to cool for a few minutes. Add the peanut butter and coconut flour to the caramel mixture and whisk until well incorporated.


Then in the silicone candy bar mold, add a layer of peanuts to each mold covering the bottom.(If adding to an 8×8 dish, add parchment paper and then add a layer of peanuts.) Stick in the freezer for at least an hour.


Lastly, take the candy bars out of the mold and store in the fridge.(Take out of the dish and cut into bars then store.)

Equipment
- 1 silicone candy bar mold or 8×8 dish.
Ingredients
- 1 1/2 cups dry roasted peanuts
- 1 cup coconut cream
- 1/2 cup coconut sugar
- 1/2 cup creamy peanut butter
- 1/4 cup coconut flour(sifted)
- 1 tsp vanilla extract
Instructions
- In a pan on the stove over medium heat, add the coconut cream, coconut sugar, and vanilla extract.
- When the mixture starts bubbling a lot, turn the heat down to low and let simmer for 15 mins. (Make sure to stir the mixture often.)
- Once done, set the caramel aside to cool for a few minutes. Add the peanut butter and coconut flour to the caramel mixture and whisk until well incorporated.
- In the silicone candy bar mold, add a layer of peanuts to each mold covering the bottom.(If adding to an 8×8 dish, add parchment paper and then add a layer of peanuts.)
- Pour the peanut butter caramel mixture evenly over top of the peanuts, then top with more roasted peanuts.
- Stick in the freezer for at least an hour. Then take the candy bars out of the mold and store in the fridge.(Take out of the dish and cut into bars then store.)
