Cuisine American
- 3 medium size ripe peaches
- 1 cup full fat coconut cream
- 1 15 oz can of full fat coconut milk
- 1/2 cup honey
- 1.5 tbsp vanilla bean paste(can sub with 1 tbsp vanilla extract)
- 2 tsp xanthan gum
Toppings
- Fresh peach slices
- A drizzle of vanilla bean honey
Add all of the ingredients, except for the vanilla bean honey, to a blender. Blend until the mixture is completely smooth and creamy.
Divide the ice cream mixture evenly between two Ninja Creami-compatible pint containers.
Place the pint containers in the freezer and freeze for at least 24 hours. This step is required for the Ninja Creami to work properly.
Remove a pint from the freezer and place it into the Ninja Creami. Secure it according to the manufacturer's instructions, then select the Ice Cream function and let the cycle run.
If the ice cream looks crumbly after the first cycle, add 2 tablespoons of milk and run the Re-spin function. Repeat if necessary until the ice cream reaches a smooth and creamy consistency.
Scoop the ice cream into a bowl and drizzle with vanilla bean honey. Top with fresh peach slices, grab a spoon, and dig in!
