In a high-speed blender, combine the coconut milk, almond milk, maple syrup, 1 cup of the diced mango, and vanilla extract. Blend for 30–60 seconds, or until the mixture is completely smooth and creamy with no remaining fruit chunks.
Pour the blended mango mixture into a large bowl or airtight storage container. Add the chia seeds and whisk thoroughly until they are evenly distributed and fully coated in the liquid. Let the mixture rest for 5–10 minutes, then whisk again to break up any clumps and ensure the chia seeds are evenly suspended.
Cover the container and refrigerate for at least 4 hours, or preferably overnight, until the chia pudding has thickened to a creamy, spoonable consistency.
Add 1 cup of diced mango to a small blender or food processor. Blend until smooth to create a thick mango purée. If needed, scrape down the sides of the blender to ensure an even consistency.
Divide the mango purée evenly among 3 mason jars or individual serving jars, spreading it into an even layer on the bottom of each jar.
Stir the chilled chia pudding well, then spoon it evenly over the mango purée in each jar, smoothing the tops with the back of a spoon.
Top each parfait with about ⅓ cup of dairy-free coconut yogurt and ⅓ cup of fresh diced mango. For extra texture, garnish with toasted coconut flakes, granola, or a sprinkle of additional chia seeds, if desired.
Enjoy immediately, or cover and refrigerate until ready to serve. Store the assembled parfaits in the refrigerator for up to 1 week.
