Mango Chia Pudding Parfaits

I have unlocked the secret to making the creamiest chia pudding and if you haven’t tried adding some yogurt, you are missing out! This mango chia pudding parfaits recipe is so easy to prep and i delicious layers or tropical mango puree, coconut milk based mango chia pudding, and topped with coconut yogurt and mango chunks for the ultimate flavor. You can enjoy this for breakfast or as a healthier snack or dessert!

Chia pudding is one of my favorite easy breakfasts to prep and you can make so many flavor combinations! I think that this mango chia pudding parfait recipe is in my top 3 favorite flavors and it is definitely a must try. The creamy textures and tropical mango flavors are basically summer in a jar, and these parfaits are so filling and nutrient dense. If you haven’t tried making chia pudding before, I definitely recommend trying out this recipe first if you love mangos!

Chia Seeds – Chia seeds are the star ingredient that transforms the pudding into a thick, creamy texture. They’re an excellent source of fiber, plant-based omega-3 fatty acids, and protein, making this parfait both satisfying and nourishing.

Coconut Milk – Full-fat coconut milk creates an ultra-creamy, rich chia pudding with a subtle tropical flavor that pairs beautifully with fresh mango. It also keeps this recipe completely dairy-free and vegan.

Lite Dairy Free Milk – A splash of lite dairy-free milk, such as almond, oat, or cashew milk, helps create the perfect pudding consistency without making it too rich. It lightens the texture while keeping the recipe creamy and plant-based.

How to make the mango chia pudding parfaits

Prepare the mango mixture

In a high-speed blender, combine the coconut milk, almond milk, maple syrup, 1 cup of the diced mango, and vanilla extract. Blend for 30–60 seconds, or until the mixture is completely smooth and creamy with no remaining fruit chunks.

Mix the chia pudding

Pour the blended mango mixture into a large bowl or airtight storage container. Add the chia seeds and whisk thoroughly until they are evenly distributed and fully coated in the liquid. Let the mixture rest for 5–10 minutes, then whisk again to break up any clumps and ensure the chia seeds are evenly suspended.

Cover the container and refrigerate for at least 4 hours, or preferably overnight, until the chia pudding has thickened to a creamy, spoonable consistency.

Make the mango purée

Add 1 cup of diced mango to a small blender or food processor. Blend until smooth to create a thick mango purée. If needed, scrape down the sides of the blender to ensure an even consistency.

Assemble the parfaits

Divide the mango purée evenly among 3-4 mason jars or individual serving jars, spreading it into an even layer on the bottom of each jar. Then, stir the chilled chia pudding well, then spoon it evenly over the mango purée in each jar, smoothing the tops with the back of a spoon.

Lastly, top each parfait with about 1/3 cup of dairy-free coconut yogurt and 1/3 cup of fresh diced mango. For extra texture, garnish with toasted coconut flakes, granola, or a sprinkle of additional chia seeds, if desired.

How to Store

Enjoy immediately, or cover and refrigerate until ready to serve. Store the assembled parfaits in the refrigerator for up to 1 week.
