Matcha Piña Colada

Creamy, tropical, refreshing, and naturally vibrant, this alcohol-free Matcha Piña Colada is a fun twist on the classic summer drink. Instead of rum, this version gets its flavor from creamy coconut, pineapple, and earthy matcha. It’s also made with less added sugar, so you can enjoy a refreshing tropical treat without making it overly sweet.

Ingredients
  

  • 1 1/2 cups coconut milk
  • 1 1/4 cup fresh pineapple chunks(or frozen for a more icy drink)
  • 2 tsp honey or golden coconut sugar
  • 1/2 cup ice(skip if using frozen pineapple)
  • 1/2 tsp matcha powder(I used Matcha Nude)
  • 1/3 cup warm water
  • Honey and toasted coconut garnish on glass rim if preferred

Instructions
 

  • First, In a small bowl, whisk the matcha powder with ⅓ cup warm water until smooth and frothy then set aside.
  • In a blender, combine the coconut milk, 1 cup pineapple chunks, coconut sugar, and ice. Blend until smooth and creamy.
  • Add the prepared matcha and the remaining ¼ cup pineapple to the blender. Blend until smooth and creamy.
  • For an optional coconut rim, place honey on a small plate and toasted shredded coconut on another. Dip the rim of each glass into the honey, then gently dip it into the toasted coconut, coating the rim evenly.
  • Fill each prepared glass halfway with ice. Pour the coconut-pineapple mixture into each glass, filling it about three-quarters full. Slowly pour the pineapple-matcha mixture over the top, allowing it to float and create a beautiful green layer.
  • Serve immediately and enjoy as-is, or give it a gentle stir to swirl the layers together before sipping.
