What you will need
Matcha – Use a good-quality culinary or ceremonial-grade matcha for the best color and flavor. Its earthy, slightly grassy taste adds a beautiful contrast to the sweet pineapple and creamy coconut. (I use the brand Matcha Nude and you c an use code SUPERFOODIE10 for a discount.)
Pineapple – Fresh or frozen pineapple works beautifully in this recipe. Its natural sweetness and bright, tangy flavor give the drink its signature tropical taste.
Coconut Milk – Coconut milk gives this drink its creamy, smooth texture and rich tropical flavor. For a lighter drink, you can use light coconut milk.
Honey – A little honey adds natural sweetness and is also used to help the toasted coconut stick to the rim of the glass. Feel free to adjust the amount to your preferred level of sweetness.
Toasted Coconut – Toasted shredded coconut adds a delicious nutty crunch and a beautiful finishing touch to the rim of the glass. Unsweetened coconut works especially well if you’re keeping the drink lower in sugar.
Warm Water – Warm water helps dissolve the matcha and makes it easier to whisk into a smooth, frothy mixture. Avoid using boiling water, which can make matcha taste bitter. A temperature no higher than 170 degrees works well.
Ice – Ice chills the drink and helps create a thick, refreshing texture when blended with the pineapple and coconut milk.

How to make the Matcha Piña Colada
- Whisk the matcha -In a small bowl, whisk the matcha powder with ⅓ cup warm water until smooth and frothy. Set aside.
- Blend the coconut-pineapple base – In a blender, combine the coconut milk, 1 cup pineapple chunks, coconut sugar, and ice. Blend until smooth and creamy.
- Make the matcha layer – Add the prepared matcha and the remaining ¼ cup pineapple to the blender. Blend until smooth and creamy.
- Prepare the garnish – For an optional coconut rim, place honey on a small plate and toasted shredded coconut on another. Dip the rim of each glass into the honey, then gently dip it into the toasted coconut, coating the rim evenly.
- Layer the drinks – Fill each prepared glass halfway with ice. Pour the coconut-pineapple mixture into each glass, filling it about three-quarters full. Slowly pour the pineapple-matcha mixture over the top, allowing it to float and create a beautiful green layer.
- Serve and enjoy – Serve immediately and enjoy as-is, or give it a gentle stir to swirl the layers together before sipping.
Tips & Tricks for the Best Matcha Piña Colada
- Whisk the matcha well – Whisk until smooth and frothy before adding it to the blender. This helps prevent clumps and creates a silky matcha layer.
- Use good-quality matcha – A vibrant green matcha with a smooth, fresh flavor will give your drink the best color and taste. Avoid matcha that looks dull or yellowish.
- Use frozen pineapple for a thicker drink – Frozen pineapple adds a naturally creamy, frosty texture without needing extra ice.
- Don’t use boiling water for the matcha – Warm water is best. Very hot water can bring out bitterness and make the matcha taste harsh.
