Matcha Pistachio Protein Balls

I always have to have some batch of healthier treats on hand throughout the week because this girl has a sweet tooth! I definitely believe that you can enjoy fun treats while still eating a balanced diet, and these matcha pistachio protein balls are absolutely delicious! They are made with simple ingredients and have about 7 grams of protein per bite!

Ingredients
  

  • 1 cup pistachio butter
  • 1/3 cup protein powder
  • 1/4 cup honey
  • 1/4 cup collagen powder(or just swap for more protein powder)
  • 2 1/2 tsp matcha powder
  • 1 tbsp melted coconut oil
  • 1/2 tsp  almond extract
  • 1/3 cup dairy free white chocolate chips
  • 1/4 cup chopped pistachios

Instructions
 

  • In a bowl, mix together the pistachio butter, honey, melted coconut oil, protein powder, collagen, 2 tsp matcha, and almond extract.
  • When the mixture becomes a dough like texture, roll it into about 14 balls.
  • Melt the white chocolate with a little bit of coconut oil to thin it out and then sift the remaining 1/2 tsp matcha into the chocolate.
  • Drizzle the matcha white chocolate over the matcha pistachio balls and then top with the chopped pistachios.
  • Store in an air tight container in the fridge and enjoy within 2 weeks.
