Matcha Pistachio Protein Balls
I always have to have some batch of healthier treats on hand throughout the week because this girl has a sweet tooth! I definitely believe that you can enjoy fun treats while still eating a balanced diet, and these matcha pistachio protein balls are absolutely delicious! They are made with simple ingredients and have about 7 grams of protein per bite!

I am definitely a snack girl and I love to eat treats that have some protein, healthy fats, and fiber in them! Life is all about balance and you can still enjoy treats while maintaining a healthy balanced diet. I am pretty obsessed with all things matcha and pistachio and there are so many amazing treats you can make with them! These matcha pistachio protein balls are such a fun treat that you can prep and enjoy all week long!

What you will need
Pistachio Butter – I love pistachio butter for it’s nutty and naturally sweet flavor! Real pistachios butter doesn’t have a bright green color to it and is more yellow green in color. Make sure to buy a pistachio butter that is pure and not artificilly dyed.
Vanilla Protein Powder – I love using the plant based vanilla protein powder by the brand Truvani but you can use you favorite brand as well.
Honey – This is what we will use to sweeten the matcha pistachio balls a little. You can also substitute with maple syrup or monk fruit.
Collagen Powder – This adds some more protein in combination with the protein powder. Collagen is great to incorporate into your diet for hair, skin, and nails support! If you are vegan then you can just substitute with more protein powder.
Coconut Oil – We will use a little bit of melted coconut oil to thin out the white chocolate.
Matcha Powder – I always use a premium grade matcha for optimal flavor and my favorite brand is Matcha Nude
Dairy Free White Chocolate Chips – I use dairy free white chocolate chips but you can substitute with regular white chocolate chips if you eat dairy based chocolate.
Almond Extract – This adds such a great flavor to the matcha pistachio balls
Pistachios – Adding some chopped pistachios on top of these balls gives them a fun texture and enhances the pistachio flavor!

How to make the matcha pistachio protein balls
Mix the Ingredients Together
In a bowl, mix together the pistachio butter, honey, melted coconut oil, protein powder, collagen, 2 tsp matcha, and almond extract. When the mixture becomes a dough like texture, roll it into about 14 balls.


Next, melt the white chocolate with a little bit of coconut oil to thin it out and then sift the remaining 1/2 tsp matcha into the chocolate. Drizzle the matcha white chocolate over the matcha pistachio balls and then top with the chopped pistachios.


Store in an air tight container in the fridge and enjoy within 2 weeks.

- 2 1/2 tsp matcha powder
- 1 tbsp melted coconut oil

- 1/4 cup chopped pistachios
Instructions
- In a bowl, mix together the pistachio butter, honey, melted coconut oil, protein powder, collagen, 2 tsp matcha, and almond extract.
- When the mixture becomes a dough like texture, roll it into about 14 balls.
- Melt the white chocolate with a little bit of coconut oil to thin it out and then sift the remaining 1/2 tsp matcha into the chocolate.
