Peach Basil Balsamic Salad

This peach basil balsamic salad is the perfect combo of sweet, tangy, and crunchy! Whenever peach season hits, I am making this salad on repeat because it is just that good! The homemade peach basil balsamic vinaigrette is also out of this world! Hope you give this recipe a try!

Salad Base
- 6 cups spinach and arugula mix
- 1 cup chopped peaches
- 1/2 cup chopped pecans
- 5-6 slices prosciutto cut into small pieces
- 1/2 cup dairy free ricotta or goat cheese
- 1/2 cup sliced red onion
Peach Basil Balsamic Dressing
- 1/2 cup avocado oil
- 1/4 cup balsamic vinager
- 1 small peach chopped
- 1 oz fresh basil leaves
Make your dressing by adding all ingredients to a food processor. Process until a smooth consistency.
In a large salad bowl, add your greens, chopped peaches, pecans, onion slices, dairy free goat or ricotta cheese, and 1/2 cup of the balsamic dressing.
Using salad tongs, mix together the salad until everything is well incorporated and the dressing is massaged into the greens.
Top with more peach slices if desired and enjoy!
