Peach Basil Balsamic Salad

This peach basil balsamic salad is the perfect combo of sweet, tangy, and crunchy! Whenever peach season hits, I am making this salad on repeat because it is just that good! The homemade peach basil balsamic vinaigrette is also out of this world! Hope you give this recipe a try!

Ingredients
  

Salad Base

  • 6 cups spinach and arugula mix
  • 1 cup chopped peaches
  • 1/2 cup chopped pecans
  • 5-6 slices prosciutto cut into small pieces
  • 1/2 cup dairy free ricotta or goat cheese
  • 1/2 cup sliced red onion

Peach Basil Balsamic Dressing

  • 1/2 cup avocado oil
  • 1/4 cup balsamic vinager
  • 1 small peach chopped
  • 1 oz fresh basil leaves

Instructions
 

  • Make your dressing by adding all ingredients to a food processor. Process until a smooth consistency.
  • In a large salad bowl, add your greens, chopped peaches, pecans, onion slices, dairy free goat or ricotta cheese, and 1/2 cup of the balsamic dressing.
  • Using salad tongs, mix together the salad until everything is well incorporated and the dressing is massaged into the greens.
  • Top with more peach slices if desired and enjoy!
