Peach Basil Balsamic Salad

This peach basil balsamic salad is the perfect combo of sweet, tangy, and crunchy! Whenever peach season hits, I am making this salad on repeat because it is just that good! The homemade peach basil balsamic vinaigrette is also out of this world! Hope you give this recipe a try!

What you will need

Spinach and Arugula – I love pairing the 2 leafy greens together for a balanced flavor.

Pecans – This nut is my personal favorite with this salad but you could use almonds or pumpkin seeds too. Candied pecan would even be better!

Peaches – make sure your peaches are nice and ripe! There’s nothing better than biting into a juicy sweet peach.

Prosciutto – I think this adds a nice salty flavor contrast with the sweetness from the peaches. If you’re vegan you can absolutely leave this ingredient out and it would still taste good!

Red Onion – This adds a nice flavor and is also packed with flavonoids like quercetin which supports a healthy immune system.

Dairy Free Ricotta or Goat Cheese – You can of course use a regular dairy version if you prefer. I love using Kite Hill almond based dairy free ricotta!

For the peach basil vinaigrette

  • Peaches
  • Balsamic vinegar
  • Avocado oil
  • Fresh basil

How to make the peach basil balsamic salad

  1. Make your dressing by adding all ingredients to a food processor. Process until a smooth consistency.
  2. In a large salad bowl, add your greens, chopped peaches, pecans, onion slices, dairy free goat or ricotta cheese, and 1/2 cup of the balsamic dressing.
  3. Using salad tongs, mix together the salad until everything is well incorporated and the dressing is massaged into the greens.
  4. Top with more peach slices if desired and enjoy!

How to store

If you’re not going to eat the salad right away, I would wait to add the dressing. The salad will get soggy if left with the dressing for a couple days.

Ingredients
  

Salad Base

  • 6 cups spinach and arugula mix
  • 1 cup chopped peaches
  • 1/2 cup chopped pecans
  • 5-6 slices prosciutto cut into small pieces
  • 1/2 cup dairy free ricotta or goat cheese
  • 1/2 cup sliced red onion

Peach Basil Balsamic Dressing

  • 1/2 cup avocado oil
  • 1/4 cup balsamic vinager
  • 1 small peach chopped
  • 1 oz fresh basil leaves

Instructions
