Peanut Butter Protein Truffles

Some days you just need a little PB and chocolate, am I right? These truffles definitely hit the spot and are packed with protein! They are no bake and very simple to make because let's face it, we all get busy and don't have the time to be in the kitchen sometimes! I personally love my treats in bite sized form, and these peanut butter protein truffles definitely don't disappoint! They are dairy, grain, gluten, and refined sugar free as well.

Ingredients
  

  • 1 cup creamy peanut butter
  • 1 tbsp coconut flour
  • 1/2 cup vanilla protein powder
  • 1 tbsp melted coconut oil(+ 1 tsp for melting with the chocolate)
  • 1/4 tbsp maple syrup
  • 1 tsp vanilla extract
  • 3 tbsp chopped peanuts
  • 1 cup chocolate chips

Instructions
 

  • In a bowl, mix together the peanut butter, 1 tbsp melted coconut oil, maple syrup, and vanilla extract.
  • Next, add in the coconut flour and protein powder, and mix everything well until a cookie dough consistency forms.
  • Stick the peanut butter mixture in the freezer for 15 minutes to chill.
  • Take the peanut butter mixture out of the freezer and then roll into 12-14 balls.
  • Melt the chocolate chips with 1 tsp coconut oil. In a double boiler or in the microwave in 30-second increments.
  • Dip a few of the PB cookie dough balls into the chocolate, and drizzle some chocolate on top of others if you'd like.
  • Chop the peanuts into smaller pieces and crumble over top of the truffles. Store in the fridge and enjoy throughout the week!
