Peanut Butter Protein Truffles
Some days you just need a little PB and chocolate, am I right? These truffles definitely hit the spot and are packed with protein! They are no bake and very simple to make because let’s face it, we all get busy and don’t have the time to be in the kitchen sometimes! I personally love my treats in bite sized form, and these peanut butter protein truffles definitely don’t disappoint! They are dairy, grain, gluten, and refined sugar free as well.

What you will need
Peanut Butter – You want to make sure to use a creamy drippy peanut butter to get a smooth cookie dough texture! I always opt for an organic peanut butter and this one is one of my favorites.
Chocolate Chips – I use dairy and refined sugar free chocolate chips but you can use any chocolate chips of choice!
Vanilla Protein Powder – I like to add extra protein to my goodies to make them a little more blood sugar balanced. Plus using a flavored protein powder, helps create a nice sweet tasting flavor that goes well in the peanut butter filling.
Coconut Flour – This is a great gluten free flour alternative and helps soak up some of the oil from the peanut butter.
Chopped Peanuts – We will be topping the truffles with some chopped peanuts for texture and a pretty look.
Maple Syrup – This is one of my favorite alternative refined sugar free sweeteners to use. You can also use powdered monk fruit or honey instead.
Coconut Oil – This helps firm up the cookie dough when chilled and also provides some healthy fats!
Vanilla Extract – I think having notes of vanilla in any dessert is essential!

How to make the peanut butter protein truffles
First, in a bowl, mix together the peanut butter, 1 tbsp melted coconut oil, maple syrup, and vanilla extract. Add in the coconut flour, and protein powder. Mix everything well until a cookie dough consistency forms.


Then, place the peanut butter mixture in the fridge for 15 minutes to chill, and then take it out of the fridge and roll into about 12-14 balls.


Next, melt the chocolate chips with 1 tsp coconut oil. Dip a few of the peanut butter balls into the chocolate, and drizzle some chocolate on top of others if you’d like.


Chop the peanuts into smaller pieces and crumble over top of the truffles. Store in the fridge and enjoy throughout the week!

Peanut Butter Protein Truffles
Ingredients
- 1 cup creamy peanut butter
- 1 tbsp coconut flour
- 1/2 cup vanilla protein powder
- 1 tbsp melted coconut oil(+ 1 tsp for melting with the chocolate)
- 1/4 tbsp maple syrup
- 1 tsp vanilla extract
- 3 tbsp chopped peanuts
- 1 cup chocolate chips
Instructions
- In a bowl, mix together the peanut butter, 1 tbsp melted coconut oil, maple syrup, and vanilla extract.
- Next, add in the coconut flour and protein powder, and mix everything well until a cookie dough consistency forms.
- Stick the peanut butter mixture in the freezer for 15 minutes to chill.
- Take the peanut butter mixture out of the freezer and then roll into 12-14 balls.
- Melt the chocolate chips with 1 tsp coconut oil. In a double boiler or in the microwave in 30-second increments.
- Dip a few of the PB cookie dough balls into the chocolate, and drizzle some chocolate on top of others if you'd like.
- Chop the peanuts into smaller pieces and crumble over top of the truffles. Store in the fridge and enjoy throughout the week!
