This vibrant Pink Pitaya Raspberry Mocktail is a fun hydrating drink to enjoy during the summertime. Pink pitaya(pink dragon fruit) is rich in vitamin C and other antioxidants that support the immune system. It is also rich in prebiotic fiber, which feeds the good bacteria in your gut! Even though dragon fruit doesn't have a strong flavor, adding raspberries, coconut water, and a splash of lemon juice really makes a great mocktail!

Equipment

  • 1 Mixing glass
  • 2 serving glasses
  • Muddler

Ingredients
  

  • 1/2 cup pink dragon fruit puree(or smoothie pack)
  • 1 cup coconut water
  • 1/2 cup sparkling water
  • Juice of half a lemon
  • 1/2 tsp liquid monk fruit
  • 2/3 cup raspberries
  • 2 cups ice

Instructions
 

  • In a glass, add the pink dragon fruit, coconut water, sparkling water, lemon juice, and monk fruit.
  • Using a mixing spoon, stir everything together well.
  • In 1-2 serving glasses, add 1/3 cup raspberries to each glass and smash them using a muddler.
  • Add 1 cup of ice to each glass and then pour the pink dragon fruit mixture.
  • Garnish with more raspberries and pink dragon fruit and enjoy!
