Pink Pitaya Raspberry Mocktail
This vibrant Pink Pitaya Raspberry Mocktail is a fun hydrating drink to enjoy during the summertime. Pink pitaya(pink dragon fruit) is rich in vitamin C and other antioxidants that support the immune system. It is also rich in prebiotic fiber, which feeds the good bacteria in your gut! Even though dragon fruit doesn’t have a strong flavor, adding raspberries, coconut water, and a splash of lemon juice really makes a great mocktail!

What you will need
Pink Dragon Fruit – Another name for this exotic fruit is Pitaya! In this mocktail recipe I used a Pitaya Foods smoothie pack. If you have some available, you can use fresh pink dragon fruit.
Raspberries – Raspberries are high in fiber and antioxidants! They are one of my favorite berries and add such a delicious flavor to drinks!
Coconut Water – This adds natural electrolytes which well help keep you hydrated and replenished! It also adds a little natural sweetness to this fun drink.
Sparkling Water – This adds a little bubbly fun to the drink.
Lemon Juice – I love adding a touch of citrus to my drinks because it adds more flavor.
Monk Fruit – This is optional but I prefer to sweeten my drink a little bit with this alternative. It is zero calorie and does not affect the glycemic index like other sweeteners.
Ice – You need to have ice for any fun mocktail drink!

How to make the pink pitaya raspberry mocktail
- In a glass, add the pink dragon fruit, coconut water, sparkling water, lemon juice, and monk fruit.
- Using a mixing spoon, stir everything together well.
- Next, In 1-2 serving glasses, add 1/3 cup raspberries to each glass and smash them using a muddler.
- Add 1 cup of ice to each glass and then pour the pink dragon fruit mixture.
- Garnish with more raspberries and pink dragon fruit and enjoy!

- Muddler
Ingredients
- 1/2 cup pink dragon fruit puree(or smoothie pack)
- 1 cup coconut water
- 1/2 cup sparkling water
- Juice of half a lemon
- 1/2 tsp liquid monk fruit
- 2/3 cup raspberries
- 2 cups ice
