Pink Rose Ice Mocktail

This Pink Rose Ice Mocktail is such a fun and cute idea to make for Valentine's Day! The rose ice "cubes" are colored naturally using pink dragon fruit powder and will definitely elevate any drink! All you need are a few simple ingredients and rose shaped silicone molds!

Equipment

  • Rose shaped silicone molds
  • serving glasses

Ingredients
  

  • 1 1/2 cups coconut water*
  • 1 tbsp pink dragon fruit powder
  • 1 tsp edible glitter(plus more for topping)
  • Sparkling bubbly drink of choice**

Instructions
 

  • In a glass, mix together the coconut water, pink dragon fruit powder, and edible glitter using a whisk or hand frother.
  • Pour the mixture into a few rose shapped silicone molds and then freeze for a few hours or overnight.
  • When ready to serve, pop the rose ice "cubes" out of the molds and add to a serving glass and topped with a little more glitter.
  • Pour over your favorite bubbly drink or a low sugar soda and enjoy.
