Pink Rose Ice Mocktail

This Pink Rose Ice Mocktail is such a fun and cute idea to make for Valentine’s Day! The rose ice “cubes” are colored naturally using pink dragon fruit powder and will definitely elevate any drink! All you need are a few simple ingredients and rose shaped silicone molds!

What you will need

Coconut Water – Coconut water has a naturally sweetness to it and is also very hydrating! This will be the base for the rose ice cubes and I love using the brand Harmless Harvest because their coconut water is naturally pink.

Pink Dragon Fruit Powder – This is also know as pink pitaya powder which gives the most gorgeous pink color! I use the brand Nature’s Restore and you can use my code SUPERFOODIE20 for 20% off your order.

Edible Glitter – This makes the rose ice cubes look so pretty and makes the mocktail sparkly as the ice melts in the drink.

Sparkling Drink or Soda – You can use either a sparkling juice or low sugar prebiotic soda. I love the Raspberry Rose soda from the brand Poppi.

How to make the Pink Rose Ice Mocktail

First in a glass, mix together the coconut water, pink dragon fruit powder, and edible glitter using a whisk or hand frother. Then, pour the mixture into a few rose shaped silicone molds and then freeze for four hours or overnight. When ready to serve, pop the rose ice “cubes” out of the molds and add to a serving glass and topped with a little more glitter.  Then, pour over your favorite sparkling juice or low sugar soda and enjoy!

Ingredients
  

  • 1 1/2 cups coconut water*
  • 1 tbsp pink dragon fruit powder
  • 1 tsp edible glitter(plus more for topping)
  • Sparkling bubbly drink of choice**

Instructions

  • Pour the mixture into a few rose shapped silicone molds and then freeze for a few hours or overnight.
