Pumpkin Fig Chia Pudding Parfait

During the Fall season, I am all about pumpkin spice recipes! If you're like me, then you will absolutely love this pumpkin fig chia pudding parfait. It has a creamy dairy free protein pumpkin yogurt layer, a pumpkin spice chia pudding, and is topped with fresh fig slices and granola for a little bit of crunch. This parfait is great to prep for an easy breakfast on the go or to enjoy as an afternoon snack!

Equipment

  • 1 Blender
  • 2 mason jars or other storage containers

Ingredients
  

For the chia pudding

  • 1 cup full fat coconut milk
  • 1/2 cup almond or coconut milk
  • 1/2 cup chia seeds
  • 1/4 cup pumpkin puree
  • 3 tbsp maple syrup
  • 1 tbsp pumpkin spice

For the protein pumpkin yogurt

  • 1 cup dairy free yogurt
  • 3 tbsp pumpkin pure
  • 1/4 cup vanilla protein powder
  • 1 tsp pumpkin spice
  • 1 tbsp maple syrup

Other ingredients

  • 1 cup fresh figs
  • 1 cup gluten free/grain free granola

Instructions
 

  • In a container, mix together the pumpkins spice chia pudding ingredients and then place in the fridge for 4 hours to chill. This will allow the chia seeds to expand and absorb the liquid.
  • Take the chia pudding out of the fridge and the add the a blender and blend for a few seconds. I prefer the texture of blended chia pudding and this method also makes it thicker.
  • Next, make the protein pumpkin yogurt by mixing all the ingredients together in a bowl.
  • Add the protein pumpkin yogurt to the bottom of 2 mason jars or containers.
  • You can slice a couple fig slices into this circles and place on the inside of the jars facing the glass for a pretty look.
  • Add the pumpkin spice chia pudding to the mason jars, and then top with chopped fig slices and granola.
